Microgreens are tiny plants, usually harvested within 2 weeks of seed germination, that pack a powerful nutritional punch. Microgreens are the young seedlings of edible vegetables and herbs. Microgreens are not the same as sprouts. A single serving of microgreens can provide fiber, protein, and a variety of vitamins and minerals. Although Sprouts are an excellent source of amino acids, pectins and sugars than microgreens, Microgreens contain high levels of carotenoids, chlorophylls and organic acids but scarce amounts of sugars (great for a person who is diabetic). Microgreens show higher anti-diabetic and anti-cholinergic activity than sprouts.

They may be tiny, but a new study shows trendy microgreens punch well above their weight when it comes to nutrition. Researchers found microgreens like red cabbage, cilantro, broccoli, and radish contain up to 40 times more nutrients than their mature counterparts.
Dubbed “microgreens” due to their tiny colorful leaves known as cotyledons, which are leaves of the embryo of a seed plant. They are usually about 1-3 inches long and come in a rainbow of colors, making them popular in recent years as garnishes with world-famous chefs. Many fine dining restaurants topped their gourmet dishes with microgreens to make their gastronomical creations even more beautiful and elegant.

HOW OUR MICROGREENS DELIVERED

Our microgreens are delivered in plant-based clear containers that are compostable. This means the container will disintegrate into non-toxic, natural elements.

HOW WE GROW MICROGREENS

Microgreens goes through a 3-step process during their germination stage.

Stage 1: Weighted germination – seeds are evenly spread on the growing medium and a top grow tray is put on top with a 10-15 pound weight to create a dark environment and also to force the seed to grow roots deeper into the growing medium making them more stable and solid as they reach the microgreen stage. This first stage of germination is about 2 to 5 days depending on the type of microgreen being grown.

Stage 2: Blackout – After 2 to 5 days of weighted germination, the weight is removed and the top tray is flipped and used to create a dome above the early sprouts. This blackout period will simulate an environment for the seed sprout similar to being covered with soil and will accelerate growth producing those tiny leaf-looking Cotyledons as it stretch out seeking for light. Blackout period is about 1 to 4 days depending on the type of microgreen being grown.

Stage 3: Exposure To Light – After blackout (period of darkness), light is introduced to the young microgreens which at first will appear yellowish in color (because of the lack of chlorophyll). Because we grow microgreens in a controlled environment in-door we use advanced LED full-spectrum light source until it is ready for harvest. Full spectrum simply means the light source emit only specific frequencies of light that is required by the microgreens. The microgreens will stay in light for 3 to 5 days before harvest. Most microgreens can be harvested within 8 to 12 days from the first day of germination.

MICROGREENS NUTRITIONAL MATRIX

The information in this comparison matrix will help you determine the nutritional content of each of the microgreens on the matrix. The bottom row is a total “nutritional count” for each microgreens. Radish scores a total of 15 which means 15 of the list of nutrients are found in daikon radish.

The cells highlighted in yellow are nutrients that are only found in specific microgreens on this matrix. For example, is only found in broccoli microgreens. Sulforaphane is an antioxidant. Antioxidants are substances that may protect your cells against free radicals, which may play a role in heart disease, cancer and other diseases. Free radicals are molecules produced when your body breaks down food or when you’re exposed to tobacco smoke or radiation. 1 oz broccoli sprouts = 73 mg of sulforphane
Most therapeutic amounts will require you to consume about 4-5 oz daily.
